For a long time, Vietnam has been famous for "peppercorns", a spice born in lands of year-round sunshine and wind, blooming and bearing fruit under the scorching sun to produce large, round peppercorns with a strong, rich aroma and a lingering aftertaste. Pepper branches are harvested when the peppercorns are still green with a few yellow ones, containing the peppercorns inside. Fully ripe and hard peppercorns will provide the most authentic aroma and spicy flavor. The peppercorns are separated from the stems and dried in the sun for many days until they turn black and reach the appropriate moisture content.
