The Kim Hoa 35°N Fish Sauce product line is a natural, pure fish sauce, without any additives or concentration. Kim Hoa Fish Sauce is made 100% from anchovies from the Phu Quoc sea - a type of anchovy that is rich in protein and fresh. After being caught, the anchovies are immediately salted on the boat at a ratio of 3 fish to 1 salt. When the boat docks, the fish are transferred to barrels, the salt content is checked, and the process of pressing and fermenting in characteristic wooden barrels begins. This process must take at least 12 months for the fish to be fully hydrolyzed. At that time, the extracted fish sauce will have a characteristic brown color, rich flavor, and sweet aftertaste, with the richness of the fish protein lingering in the throat.
